The restaurant industry, like the world around us, is changing. Of the many positive changes happening - safer working environments for women, minorities, and people with disabilities, minimum wage increases, a renewed interest in organic and sustainable food and practices – there is also a deepening economic divide in this country that threatens not only our customer base, but our coworkers and each of our restaurants. Simply put, the dollar does not go as far as it used to. Things just cost more, and concerned on this comment, increased living expenses, record property values, and rising insurance costs. People have less money, and they are changing the way they spend their money and the way they eat out. Today, the American restaurant industry is facing a new reality as well - higher rents, lower consumer spending and frequency, and rising food and transportation costs, all of which have reshaped the entire landscape. 

However, in the middle of this perceived reality, there is one type of restaurant that can not only exist, but can thrive in our current economic climate… The hospitality driven restaurant (HDR) which we define as a restaurant that invests in its staff members and its customers equally.
